Farmers Market Recipe April -vegetarian main course

Norfolk Fondue

1lb Norfolk Dapple Cheese Grated
Half a small onion
Half pint dry cider or white wine
1 teasp lemon juice
1 tab cormflour
2 tesp cherry
Pinch dry mustard
Pinch cayenne pepper
To serve
Celery and crusty bread


Rub the inside of a flameproof dish with the oinion
Add the wine or cider and heat gently until bubbling
Gradually stir in the cheese and heat gently until it begins to cook
Mix the cornflour with the mustard and pepper
Add the lemon juice and sherry and mix to a paste
Stir into the cheese mixture and stir for 2-3 minutes until thickened

Serve with crusty bread and celery sticks to dip and eat.
