Barnards Beef in Blackwood Beer (Beef and Beer available from the Golden Triangle Farmers Market)
Ingredients
11/2 lbs Barnards braising steak cut into 2 inch (5 cm) squares
1 bottle Blackwood Stout from Grain brewery
1 tbsp sunflower oil
3 large onions peeled sliced
1lb mushrooms sliced
1 heaped tbsp plain flour
I tabs Norfolk honey
1 bay leaf
salt and freshly milled black pepper
Put the oil in a flameproof casserole, place it over a medium heat, until hot but not smoking and fry the onions stirring regularly until golden brown.
Add the meat and seal on all sides.
Sprinkle in the flour. Using a wooden spoon, stir until all the flour has been absorbed into the juices.
Gradually stir in the beer and gradually bring up to simmering point.
Add salt, freshly milled black pepper, honey and bay leaf.
Put the lid on and ensure it is a good seal; transfer it to the centre shelf of a moderate or slow oven for 2 hours.175c Mark 3 gas
Remove from the oven and add the mushrooms and cook for a further 1 hour
Taste and adjust the seasoning. Serve with crusty bread or parsnip and horseradish mash. link
Its even more delicious if made the day before and then reheated thoroughly.
